Roasted Red Pepper Tomato Soup
Ingredients:
Homemade Roasted Pepper & Tomato Soup 🍅🌶
6 - 10 Vine or Roma tomatoes
1 bell pepper
2 large white onions
I head of garlic
Fresh herbs
6-8 cups water or chicken stock
6 oz tomato paste
1/3 cup heavy cream 🐄
1 Tbsp balsamic glaze
1 Tbsp granulated sugar
Salt and pepper to taste!
Directions:
Roast your tomatoes, peppers, onion, fresh herbs and garlic on a baking sheet at 350 degrees F for about 30 minutes. Coat in olive oil and salt and pepper before baking.
Once removed from oven, transfer your roasted items into a pot, and add your water or chicken broth. Blend with an immersion blender until smooth consistency.
From here, add the tomato paste, cream, balsamic glaze and sugar. Stir until combined and allow to simmer on medium heat for at least 10 more minutes.
Remove from heat and enjoy with your favorite grilled cheese!
