6 Ingredient Ham & Bean Soup

Here’s a super delicious, easy & high fiber soup I love to throw on the crockpot for a simple meal!

Ingredients:

1 celery stalk rough chopped

5-7 rough chopped large carrots

2-3 medium yellow onions

1 bulb of minced garlic

1 bone-in ham steak, rough chopped

1 bag (16 oz) of 15 bean mix soup — any mixed bean blend will work!

6-8 cups of water

Directions:

Add all contents to your slow cooker and cook all day on low (10 hrs) or on high for 6 hrs.

I also add a few bay leaves in slow cooker + pepper to taste.

The longer this soup cools and breaks down the better!

I re-heat in crockpot for extended cooking time for each leftover serving.

I serve over a bed of brown rice and top with grated Parmesan + shredded cheddar!
