Milk & Honey Cake

A simple, classic tea-time cake with a tender crumb, the perfect balance of sweetness, and pairs deliciously with a drizzle of honey!

Prep Time: 20 minutes

Bake Time: 35- 45 minutes

Serves: 8-10

Ingredients:

  • 2 1/2 cups flour

  • 2 Tsp baking powder

  • 4 eggs + 1 egg yolk

  • 1 Tbsp vegetable oil

  • 2 1/2 cups granulated sugar

  • 1 Tsp vanilla

  • 1 Tsp honey (optional)

  • 1 1/4 cup whole milk

  • 4 Tbsp butter

Directions:

  1. Preheat oven to 350 degrees F. Prepare your cake pan with room temperature butter and flour for non-stick. In a large bowl mix your flour and baking powder, set aside.

  2. In a separate large bowl or stand mixer, beat eggs, egg yolk, vanilla, and sugar for about 5 minutes. The mixture should be lighter in color and thicker in consistency as it falls from the whisk.

  3. Heat your milk and butter on the stovetop until you see small bubbles forming around the outer perimeter of the pan. Remove from heat.

  4. Add your dry ingredients into your egg mixture and gently fold until there are no visible flour streaks. Add your now warm milk and butter mixture and fold until combined with batter. Pour finished batter into your prepared cake pan and bake for 35-45 minutes, or until toothpick inserted in middle of cake comes out clean.

  5. Allow to cool before removing from pan. Serve with confectioners sugar, honey and/ or fresh fruit.
