Classic Vanilla Cupcakes

Ingredients:

  • 2 1/4 cup granulated sugar

  • 1/2 cup vegetable oil

  • 3 eggs + 1 egg yolk

  • 1 1/2 Tbsp vanilla

  • 1/2 cup sour cream

  • 2 1/2 cup flour

  • 3 Tsp baking powder

  • 1 Tsp salt

  • 1 1/4 cup of milk

Directions:

  1. Preheat oven to 350 degrees F. & line a cupcake pan with liners

  2. Combine the sugar, vegetable oil, eggs and vanilla in a large mixing bowl, beat on medium speed for about 2 minutes. Add sour cream and mix until combined.

  3. In a separate large mixing bowl, combine and mix your dry ingredients of flour, baking powder and salt. Add your dry ingredients to your egg, oil and sugar mixture. Once the flour has just began to become incorporated, add your other half. Be careful not to over-mix.

  4. Scoop your batter into your cupcake liners, about 2/3 of the way full. Bake for 14- 17 minutes, remove once toothpick inserted in middle comes out clean. Allow cupcakes to cool before frosting.
