Blueberry Sour Cream Cake

Ingredients:

Cake:

  • 2 sticks of room temperature butter (1 cup)

  • 1 1/2 cups white sugar

  • 2 eggs

  • 2 tsp vanilla

  • 3/4 cup sour cream

  • 1/2 tsp salt

  • 1 tsp baking powder

  • 1 2/3 cups all purpose flour

  • 1 3/4 cups blueberries

Icing:

  • 3 tbsp melted butter

  • 1 3/4 cup powdered sugar

  • 1 tsp vanilla

  • 2 tbsp milk

Directions:

Cake:

  1. Preheat oven to 350

  2. Mix butter and sugar together until fluffy, either by hand or a stand mixer, approx. 2 minutes.

  3. Add eggs, vanilla, sour cream, salt, and baking powder. Mix until smooth.

  4. Mix the flour in slowly until combined

  5. Coat a bundt pan (approx. 10”) with non stick spray and spread batter into pan. Bake until toothpick insert4ed in center comes out clean, approx. 50 - 55 minutes.

Icing:

  1. Combine and mix ingredients in a medium bowl. Add more milk for a thinner icing, and more powdered sugar to thicken

  2. Drizzle onto cake once it has been removed from bundt pan and cooled
