Blueberry Sour Cream Cake
Ingredients:
Cake:
2 sticks of room temperature butter (1 cup)
1 1/2 cups white sugar
2 eggs
2 tsp vanilla
3/4 cup sour cream
1/2 tsp salt
1 tsp baking powder
1 2/3 cups all purpose flour
1 3/4 cups blueberries
Icing:
3 tbsp melted butter
1 3/4 cup powdered sugar
1 tsp vanilla
2 tbsp milk
Directions:
Cake:
Preheat oven to 350
Mix butter and sugar together until fluffy, either by hand or a stand mixer, approx. 2 minutes.
Add eggs, vanilla, sour cream, salt, and baking powder. Mix until smooth.
Mix the flour in slowly until combined
Coat a bundt pan (approx. 10”) with non stick spray and spread batter into pan. Bake until toothpick insert4ed in center comes out clean, approx. 50 - 55 minutes.
Icing:
Combine and mix ingredients in a medium bowl. Add more milk for a thinner icing, and more powdered sugar to thicken
Drizzle onto cake once it has been removed from bundt pan and cooled
