Honey Garlic Roasted Carrots

Ingredients:

  • one bunch of whole carrots

  • 2 tbsp olive oil

  • 2 tbsp honey

  • 1 tsp water

  • 3 cloves of minced garlic

  • Salt & Pepper to taste

  • Fresh Dill (2-3 tbsp)

  • Feta crumbles (3-4 tbsp)

Directions:

  1. Preheat oven to 425 degrees F. Begin by washing your whole carrots free of dirt & debris. Slice whole carrots in half and lay on a parchment covered baking sheet.

  2. In a separate bowl, combine olive oil, honey, water, garlic, and salt + pepper. Whisk until fully combined. Evenly cover carrots with mixture by drizzling with a spoon. Bake for 20-25 minutes. Carrots should be fork tender but not browned.

  3. Garnish with fresh dill + feta crumbles.

Can swap fresh dill for crushed pistachios & pomegranate seeds as well!!
