Eggnog Pound Cake

The perfect Christmas baking project…..

Sweet, simple & a fun Christmas twist on a classic recipe✨

Ingredients:

1 1/2 cups all purpose flour

1 Tsp baking powder

1/2 tsp pumpkin pie spice

1 cup granulated sugar

1/2 cup room temp butter 🐄

2 eggs

1 Tsp vanilla

3/4 cup eggnog 🐄

For the Glaze:

1 cup powdered sugar

1-2 tbsp egg nog 🐄

Chopped pecans

Directions:

1. Preheat oven to 350 degrees F. Line a loaf pan with parchment paper (leave long enough to hang off of sides to pull the cake out) or grease with butter.

2. In the bowl of your stand mixer with the paddle attachment, combine flour, baking powder, pumpkin pie spice & sugar. Add softened butter cut up into cubes and mix on medium speed for 2-4 minutes. Not until a dough forms, but until it holds it’s shape when pinched.

3. In a separate bowl, combine vanilla, eggs and eggnog and whisk together. Add about half of this mixture to your flour mix with the whisk attachment on medium-high speed for about 3-4 minutes, scraping sides. Now add the remaining liquid mixture and mix until combined.

4. Add batter to your prepared loaf pan and bake for about 45-50 minutes, covering with foil at 30 minutes to avoid top from being too brown. When toothpick inserted in center comes out clean it is done. Be careful not to overtake to avoid a dry cake.

5. Remove from pan and allow to cook before glazing. For the glaze combine powdered sugar and eggnog and whisk. Sift your powdered sugar to avoid a lumpy glaze. Add more sugar or eggnog to change the consistency of your glaze. Top your pound cake with your glaze and chopped pecans.
