White Chocolate & Blackberry Scones
Honestly, I’ve never gone crazy for scones. But WOW there is something about the combination of sweet berries and milky white chocolate. Heavenly, you’ll just have to find out for yourself!
Prep Time: 15 minutes
Cook Time: 20 minutes
Ingredients:
1 1/2 stick COLD butter
1 tbsp baking powder
1 tbsp granulated sugar
1/2 tsp salt
2 1/2 cups flour
1 egg
3/4 cup buttermilk
1 1/2 cup fresh or frozen blackberries
3/4 cup white chocolate chips
1 tbsp cream
1/4 cup milk
1 cup powdered sugar
Directions:
Preheat your oven to 350 degrees F. Mix your flour, baking powder, granulated sugar and salt in a large mixing bowl.
Like you would a block of cheese, grab your very cold butter and grate it with a cheese grater. Mix grated butter with your dry ingredients by hand; it should form the texture of an almond meal.
In a separate small bowl, mix your egg and buttermilk, and add to your dry butter/ flour mixture. Mix until your dough comes together
Fold in your blackberries and chocolate chips until combined, avoid overmixing. Pat dough into a disc and cut with a large knife like you would a pizza, equally into 7-8 slices.
With a brush or your fingers, add in a layer of cream onto the dough slices. Bake for 25 minutes or just before it becomes golden.
Icing:
Mix your 1/4 cup of milk and 1 cup of powdered sugar in a small mixing bowl. Add either ingredient for desired consistency. Drizzle & coat over scones when warm out of oven.
