Made From Scratch Cinnamon Rolls

Ingredients:
Dough:
1 cup warm milk
1/2 cup + 1 Tbsp granulated sugar
1 Tbsp dry activated yeast
2 eggs
6 Tbsp melted butter
1 Tsp vanilla
4 1/2 cups flour
1/2 tsp salt
2 tsp cinnamon
Cinnamon Roll Filling:
1 cup brown sugar
3 tbsp cinnamon
6 tbsp softened butter
Cream Cheese Frosting:
8 oz cream cheese
1/4 cup softened butter
2 cups powdered sugar
1/2 tsp vanilla
Directions:
For the Dough:
Add your warmed milk, 1 tbsp granulated sugar and 1 tbsp yeast in the bowl of your stand mixer. Stir for five minutes or until it becomes foamy.
Add the 1/2 cup sugar, eggs, butter, and vanilla to the mix, and stir until combined using your dough hook.
Add 4 cups of flour, salt and cinnamon; stir using the dough hook, begin on low and work your way to high slowly. Continue to now knead dough in the mixer until a large ball has formed. The dough should be smooth and only slightly sticky. If your dough is too tacky, continue to add more flour a tbsp at a time.
Move dough from mixing bowl to a clean, floured surface and knead by hand until it is elastic and smooth (5 minutes). Grease a large bowl and place your dough ball into bowl. Cover with a towel and place bowl in a warm place to rise (about one hour — don’t rush this step! It should have doubled in size)
For the Filling:
In a small bowl, combine your 6 tbsp of softened butter, brown sugar, and cinnamon. You are looking to make a brown sugar/ cinnamon spread.
Once your dough has risen, start assembling the rolls. Clear a large work space on your counter and sprinkle with flour. Form your ball of dough into a rectangle, and begin rolling the dough into a large rectangle about 1/2” thick.
Spread the filling all over the dough using a spatula or even your hands. The more you keep smearing the spread the easier it becomes. be sure to work it up to all edges and corners.
Roll the dough until you have a long log formed. Cut dough into 12 equal rolls, and place in a greased baking dish, 4 rows of 3. You want the rolls placed close together to ensure they stay moist and gooey! Cover and let rise for a half hour or until double in size. At this time you can preheat your oven to 350 degrees F.
Once risen, bake until just golden brown, about 17- 20 minutes.
For the Frosting:
Mix cream cheese, butter, powdered sugar, and vanilla. Do not place in refrigerator, keep at room temperature for easing spreading.
Once the rolls are done baking. Spread your frosting while rolls are still warm. This helps ensure it gets in cracks and fills the rolls with that delicious frosting! Serve finished cinnamon rolls warm — I will even pop one in the microwave to enjoy once they have cooled!
