Blackberry Cheesecake Bars
Ingredients:
2 1/2 cups graham cracker crumbs
1/2 cup melted butter
1/4 cup granulated sugar for crust + 2 Tbsp for berries
3 cups blueberries (fresh or frozen + thawed)
24 oz. cream cheese
1 1/4 cup granulated sugar for filling
2 Tbsp vanilla
1/4 cup sour cream
3 eggs
Directions:
Combine graham cracker crumbs, melted butter and sugar, press into bottom of your pan
Puree berries + 2 tbsp sugar until combined
Combine softened cream cheese (make sure it is room temperature for a smooth batter), vanilla, sugar, sour cream, and eggs. Beat until smooth. Be careful not to over mix, stop once smooth.
Pour half your cream cheese mixture onto graham cracker crust. Layer half of your blueberry puree onto, and swirl with a toothpick or small knife. Pour the remaining cream cheese mix overtop and repeat the step, layering the remaining blueberry mix and swirl with a toothpick.
Bake at 325 degrees F for about an hour, checking it half way through. If it begins to become too brown onto before baking all the way through, cover with foil.
Chill before cutting into bars.
