Mango Jelly Trifles

These mango jelly trifles are such a fun way to elevate your yogurt parfaits that everyone will enjoy!

Ingredients:

For the mango jelly:

2 mangos

2 cups of orange juice

Juice of 1/2 lime

2 cups water

1/4 cup sugar

2 tsp agar agar

Directions:

  1. In a large saucepan, combine the mango flesh, orange juice and water. Bring to a boil and simmer until mango is soft and pulpy and the mixture has reduced by about half. Add the lime juice and sugar and blend with a hand mixer until smooth.

  2. Allow to cool before whisking in the agar powder and let sit for 10 mins. Boil the mixture for another 5 minutes before letting cool once more to room temperature. Transfer jelly into trifle dish and chill overnight in the refrigerator.

  3. Top with vanilla yogurt and your favorite parfait toppings including fruit, nuts & granola!
