Split Pea Soup
Ingredients:
3-5 large peeled carrots, rough chopped
2-3 large white or yellow onions, rough chopped
4-6 celery stalks, rough chopped
1 large ham steak (bone in preferably for flavor), rough chopped/ cubed
16 oz. bag of dry split peas
2-3 tbsp minced garlic
2 bay leaves
5-7 cups of water (you want water reaching the same level as or an inch or two above of all of your vegetables when laid out in your crockpot/ pot)
1/2 cup dry white wine (optional — I don’t always add this but a great flavor compliment when I do!)
Salt and pepper to taste
Directions:
Peel and rough chop your celery, onion and carrots. Chop your ham steak in small cubes. Add all ingredients to your pot/ crockpot, including your ham bone for flavor.
Add bag of split peas, garlic, bay leaves, water and wine if choosing to add. Cook on low for 10 hours, or high for 8, stirring throughout the day. The soup will continue to break down even after cooking for the 8-10 hours. I choose to continue to reheat mine in the crockpot to extend its cooking time and enjoy it more broken down each serving.
Serve by itself or over a bed of brown rice topped with your favorite shredded cheese. I choose grated parmesan and shredded cheddar!
