Sausage & Pear Stuffing

Ingredients:

1 loaf of stale, crusty bread cut into 1/2” cubes, or use stuffing pre cubed!

1 lb ground sweet Italian sausage

3 tbsp butter 🐄

1 tbsp minced garlic

1 large onion, chopped

3 stalks of celery, chopped

1 lb sliced Bella or white button mushrooms

3 Bosc pears, cored & chopped

2 tbsp fresh sage, finely chopped

1 tbsp fresh thyme, finely chopped

1/3 cup fresh parsley, chopped

2-3 cups chicken or vegetable stock

S&P to taste

Directions:

1. Preheat oven to 350F. In a large skillet over medium- high heat, cook the sweet sausage until thoroughly browned. Remove and set on a paper towel lined plate.

2. In the same skillet, add the 3 tbsp of butter and melt until frothy, and add the onion, celery, minced garlic and mushrooms. Season with salt and pepper. Cook for about 5 mins until tender, then add the Bosc pears, cook for an additional few minutes.

3. In a large bowl, combine the cubed bread, cooked vegetables & pear, along with the cooked sausage and fresh herbs. Begin by adding 2 cups of chicken or vegetable stock and stir to combine before deciding if you need to add more, adding only 1/3 cup at a time if so. You want to reach a moist consistency that is not too soggy, the bread needs to maintain its cubed shape.

4. Transfer to a greased baking dish and seal with foil to bake for 30 minutes. Remove foil and bake for an additional 10 minutes or until top is crusty and golden brown. Serve immediately.
