Apple Pie Bread Pudding
Ingredients:
8 cups bread, cubed (a large French loaf works best! Can be stale!)
3 apples; cored, peeled and chopped
4 eggs
1 cup vanilla yogurt (whole fat)
1 cup milk
2 tbsp granulated sugar
2 tsp cinnamon (divided)
1/2 tsp nutmeg
1 tsp apple pie spice
For the caramel sauce:
1 cup unsalted butter
1 cup heavy cream
1 cup brown sugar
2 tbsp maple syrup
Instructions:
Preheat oven to 350 degrees F. Coat a 9x13 “ baking dish with softened butter & flour.
In a large bowl, whisk your vanilla yogurt, milk, eggs, 1 tsp of the cinnamon, nutmeg and apple pie spice. Add bread cubes and diced apples, and gently fold in. Once fully coated/ absorbed in the milk mixture, pour into your prepared pan.
In a small bowl, stir together the 2 tbsp of granulated sugar and 1 tsp of cinnamon. Sprinkle mixture on top of your bread pudding until the top is coated. Bake for about 30-35 minutes, remove when top is golden brown.
While that is baking, prepare your caramel sauce. In a small saucepan over medium-high heat, stir your melted butter, heavy cream, brown sugar and maple syrup together. Bring to a boil for about 10 minutes, or until sauce thickens. Pour over your baked bread pudding to serve. Top with a scoop (or two!) of vanilla ice cream. Best enjoyed served warm.
