Cilantro Lime Chicken with Mango Salsa
Ingredients:
For the marinade:
1 1/2 lbs boneless, skinless chicken breasts (thighs work too)
3/4 cup orange juice
1/2 cup olive oil
1/3 cup lime juice
2 tbsp honey
1 Tsp cumin
1 tbsp minced garlic
1/2 cup coarse chopped cilantro
For the mango salsa:
1 mango
1 avocado
2 jalapeños
1 red bell pepper
2 tbsp orange juice
2 tbsp lime juice
1 Tsp olive oil

Directions:
1. Tenderize raw chicken breasts with a meat tenderizer to even thickness. Combine all marinade ingredients and add chicken to marinade to sit for at least 30 mins before cooking at room temperature, or 2-3 hours in the fridge.
2. Finely chop all salsa ingredients and toss to combine. Set aside to use as garnish at serving. Keep refrigerated.
3. Grill at 400 F for 5-7 mins / side, brushing chicken with marinade while cooking.
Top chicken over a bed of cilantro lime rice & garnish w salsa.
